I’m not much of a muffin person. I think they’re kinda silly… just like cake. But I was inspired to make blueberry muffins after a character on a show I was watching was eating a muffin. I could not shake the craving. So I made the muffins and they were delicious, so that sounds like a win to me!
I began by making my own granola bars because granola bars (or otherwise termed protein or energy bars) are expensive and often times like eating a candy bar. I enjoy being able to add whatever combination of ingredients together and shaping them into little bites. I generally have my go-to combinations, but the other day I was looking for something a little different and stumbled upon this recipe for a carrot energy bite.
A very easy vanilla cupcake recipe and has very basic ingredients you’re likely to have in the pantry now. So whip up some cupcakes for whatever event you’re celebrating 🙂
